Yesterday I took a back rib of beef and put on a coffee/chilli rub. Then browned off some onions, added some beer (Proper Job - IPA) and some beef stock. Put this into a roasting tin, sat beef onto a rack above the liquid and put foil over the whole nice and tight then into a oven at Gas 1 for a few hours. About one hour before eating I put a bit of sweet BBQ sauce over the meat and resealed.
It just about carved so wasn't over done and had some juices. Great taste with mash and some vegetables.

Just been out for a nice Christmas meal with some friends I worked with 30 years ago at Jones Cable, a precursor of VM
I had deviled kidneys for starters, then 12oz Aged Yorkshire Rib Eye with Vine Tomatoes, Green Peppercorn Sauce, and pomme frites, followed by Christmas Pudding in an Armagnac and Morello Cherry sauce.
We drank Geverey Chambertin (very nice), Recolata Malbec (OK), and some Jeune Rouge Chateau Bessarabia, Beka Valley, Lebanon (very nice) - 3 bottles between two went down very well.
