Don't know if it's different on the S5, but on the S4 it's Contacts > Settings > Contacts to Display

However whether than then filters through to the dialler or not I don't know.

Personally unless there is a pressing reason to have SIM contacts, I'd delete them and store everything in your Google contacts. It then means they are fully backed up if your SIM or phone fail or get lost / stolen.
